How does he get the camera to move / zoom during the time-lapse? It's very cool.

You can either use sliders and zoom motors attached to the lens, or simply do it in post-processing by defining a cropped area and have it move through the original frame. I assume he used the latter method.

I am looking forward to using this feature with the K-1... Knowing I can make 4K time lapse movies automatically will make me much more likely to make them than when I have to make them from the stills... (Page 61-62 of the manual)

I believe there are special rigs, but the poor man's version is to take different crops of a wider frame as you assemble your movie. After all, even 4K is just 8MP. So you can crop inwards, outwards, or pan from left to right within your frame.

Yes, the zooming I believe he did in post-processing, but at least some of the panning was apparently done with this motion-control device attached to the tripod mount:
