tips for shooting a couple at the beach?

It's been raining lately but once the weather is good again I've been asked to take some engagement shots of a couple soon to be married...it's my first time though and I have a couple of ideas but has anyone else done something similar before? I've asked the couple to wear all white and plan on shooting during the day and again at sunset.

I'll probably take:
k20d
12-24mm f/4 + tamron 28-75 f/2.8
42" reflector/diffusion disc
white satin umbrella + stand
a couple of flashes, cto gel + radio triggers

Will anything else come in handy? I want to give the impression that they are just enjoying themselves at the beach and want to try and avoid that forced pose look but does anyone have some posing ideas or examples?

Is a sandbag better or does one of those that gets filled with water work?
