Maytag blue, if you really want to know.

(Seriously, it's one of my very favorite blues... the other one being Rosenborg. I made stuffed cannelloni with spinach, ricotta and Maytag blue recently and it was so damned good it should be illegal.)

bluecheese . I have yet to find any producer that I can stand. now if it was goat cheese I would be all over it
