I use Mac OS X w/ Lightroom for my photo workflow and all 'round computer. I would like to check out a linux solution someday (I've got a machine running Ubuntu HH at home but it's too old / slow to be a good test bed for post processing workflows).

Vista64 on my desktop, which is used for photo editing since it has 6gb ram and 4 cores, whereas my not as powerfull laptop has ubuntu.

I use just about all the OSes mentioned so far, but for image management and editing, it's Mac OSX, Lightroom 2, and Photoshop CS4.

I use Linux (openSuSE, these days), with UFRAW/Gimp. I also have BibbleLite for Linux, and I use GeeqieView for viewing .pefs and .jpgs. I have the Pentax PhotoLab running under WINE, but I don't use it too often. I have Picassa for Linux as well, but I don't like it very much for some reason.
