There are two cathedrals in Coimbra: the old one, built between 1140 and 1175; and the "new" which dates back to... 1598 ! Some tombs inside the former clearly show their age:

If you're ever going to return, I'd strongly advise you to visit the Azores. A return ticket is about 300 euros (give or take 50, depending on the day of week and season) from Lisbon to Ponta Delgada (on the island of S. Miguel - the biggest one of the bunch).
Volcanic islands are a real treat to photograph. Just look the Azores up in flickr. You'll find enough samples to help you make up your mind.
