I don't know about the Novoflex, but the Rainbow Imaging adaptor I have isn't stepless- it has 5 steps for aperture control. While not ideal, it's better than shooting wide open all the time. If the Novoflex is indeed stepless that would be great.
Regardless of which adaptor you get you'll never know for sure what aperture you're at, though you can make some educated guesses. No focal length/aperture data in exif with any adaptor K to e mount. AFAIK the two Sony adaptors are the only ones that pass all info to the camera, but obviously only work with Sony A mount lenses.
