As a film only shooter:

K28/2: classic FF wide angle lens
K50/1.2: the best all around normal FF lens

I do this pretty often when I go out of town for a weekend. I bring my Pentax 15mm f/4 limited and my Sigma 85mm f/1.4. The 15 is fun for landscapes, capturing a whole scene and indoor stuff. Its versatile, small, easy to carry and is nice and wide. The 85 is killer at low light and portraits or shots where you need to emphasize shallow depth of field

I was in this kind of situation before. 31 and Voigtlander 125 worked as a beautiful combination to me.

M42 55MM Takumar
M42 200 or 300MM Takumar

I could get 90% of what I had to do done with those two lenses but I prefer not to go there. I don't believe in limiting myself photographically speaking.

Vivitar 7mm f/3.5 (or one of the many equiv private label'ed versions of the Samyang lens) and Voigtlander 125mm f/2.5. I have a love affair going with both of them; moreso than w/any of my lenses I love and almost typed here.

For APS-C:
DA 14mm f2.8
FA* 85mm f1.4

For FF, probably:
FA 31mm f1.8
FA* 85mm f1.4

31 has all the fans and such but I just can't see being limited to that narrow a field of view if you only have 2 lenses.
