That depends on what a photographers' purpose is.

If you're just using a larger sensor for improved IQ, then matching DOF is the way to go.
If you're looking for less noise and are willing to tolerate less DOF, or are looking for less DOF, then using a larger aperture (smaller f/number, if anyone else wants to know) is the way to go. You'll also get the better resolution too, of course.
