Make sure you are getting the focus correct on your K-5. Use the AF fine adjustment.

It's a unique lens. Remember that the FA31 is not about sharpness. It's about smooth transitions to out-of-focus - so much so that you typically can't tell where a photo transitions to OOF. It's also about being nearly impossible to get harsh OOF areas in your photo.

I have one of the later MIJ versions, purchased new. I think what you're seeing with your AIV version are likely characteristics of the lens - not AIV specific. Although I've never tried an AIV copy, I'm sure chesebert's observations are correct. But I believe these are the more subtle differences between various FA31s, whereas the FA31 itself is quite unlike any other lens (at least those I've used).

So what kind of pictures should I take to evaluate the quality of the lens and what to look for in the pictures?

Or just stick it on your camera and use it every day for a month. The FA31 is just about a perfect "normal" focal length for APS-C, so it is very versatile.
