If i were you id definitely take the 18-135 (WR remember) as this will stay on camera 90% of the time, and the tamron 17-50 f2.8. a CPL and ND filter might also be a good idea as well as a small travel tripod if you're renting a car. id leave both 8-16 and 18-35 out since theyre heavy and I think both the pentax and tamron cover you on the wide landscape side and the tamron also covers the low light photography and portrait shots. you definitely want to be travelling light as it does get tiring very quick.
the other option if you want to take 3 lenses, is the 18-135, 8-16 and DA40 XS. When I was travelling in Europe, I took my 18-135, 15mm ltd, 35 f2.4 and Samyang 8mm and that was more than enough. if i were to do it again, id leave the 8mm out. the last thing you'd want to be doing is taking a bunch of lenses, and not being able to make up your mind which lens to use for which scene and end up changing lenses constantly and missing out on the fun. remember you're there to see places and enjoy yourself, dont make it tiring!
