Aperture, Old Lenses and werewolves

I have a few questions.
When I got my 70-300 APO siggy, I saw the manual saying something about setting the aperture wheel on the lens to a specific setting before turning it on.

Today I saw several other threads where people talk about stopped down metering, and using old lenses in specific shooting modes.

What does it all mean when it comes to stopped down metering, shooting modes and to use A or not A mode on older lenses?

I thought it woudl be as simple as using either aperture on the body (and lens on A) or aperture on the lens?

if your lens has the "A" mode, just set it to that and use your lens like any other.

for old lenses w/o "A" mode on the aperture ring, please see
