Last week I saw an ebay photo business account selling a Sigma Sports 70-200mm 2.8 II APO EX DG for Pentax

For about 310 euro which would be low even for an older 2.8 70-200. I looked at the lens database, maybe missed it but saw no Sigma Sports.
Seemed all a bit shady.

The listing was gone the next day, but I am left to wonder, did Sigma ever build this and did I fail to grab a great deal?

Answering myself: just thought of a common mistake: a lens cap with a "PK/SA" print.

Most likely it was a Sigma lens and I can sleep knowing I saved myself from having to deal with the hassle of returning a lens

No, AFAIK they didn't. In the listing the seller probably mislabeled the lens (some sellers still mistakenly refer 50mm f/2 lenses as f/1.2) or equally as likely: a scam. Either way the only thing you missed out on was disappointment.

I have one of those Sigma 70-200mm 2.8 II APO EX DG lenses.
I use it for local sports.

I do too but its vintage is prior to the Sigma ART and Sports series

There has been four different Sigma 70-200s (HSM, HSM II, OS, Sports):

70-200 ƒ2.8 EX DG Macro HSM (Announced February 2006)
70-200 ƒ2.8 EX DG Macro HSM II (Announced December 2007, Updated version of the 70-200mm)
70-200 ƒ2.8 APO EX DG OS HSM (Announced February 2010)
Sports 70-200 ƒ 2,8 DG OS HSM (Announced February 2018)

For Pentax there are no sport Lenses from Sigma available.
