I recently acquired an Asahi Pentax Spotmatic SLR made around the 1970's and a fisheye screw-on lens to come with it. I also have a Canon DSLR EOS and I was wondering if there was an adapter I could find and buy to attach the Pentax fisheye lens onto the Canon? Any info would help. Thanks

yes, the spotmatic's used the M42 mount and there are lots of M42-to-<insert mount type here> adapters.

in your case, you're looking for a M42-to-EF adapter

The EOS mount has a much shorter registration distance than other mounts, so almost everything can be adapted to it and retain the old lens's infinity focus. Some adapters have the electronics necessary for focus confirmation. Some lenses may project a little too far into the mirror box on FF Canons. The fix is to modify the lens or the mirror.

I used to have an adapter from goshotcamera on ebay...cost like $16, good fit and quality. This was, of course, a non-AF-confirm adapter but still worked well.

It is true for pretty much every 35mm lens mount except Minolta and Canon's own older MF lenses.
