2, 1, 2, have better color thats why I said the 18x55.

If you really want to see the difference between the two lenses, however large or small, you'll have to try images that challenge the optics. Here are some examples of 'challenging' images:

1) Heavily backlit scenes or ones with the sun in the frame. Look for specular and veiling flare.

2) Wide open for shallow DOF and/ or low light use. Especially in combination with #1. Also, the appearance of unsharp areas may (or may not) be important to you.

3) Face on views of architecture where small amounts of distortion become obvious. This is less important with digital since distortion can be easily corrected with P-shop.

Even at F/9 and flat lighting, the greater contrast of the 31mm lens is pretty obvious to my eye, though I'd be happy with either.
I guess the bottom line is whether the lens you choose works to your satisfaction for your purposes. There are a lot of tradeoffs between the kit zoom and an expensive prime. Obviously the zoom has the advantage of versatility and cost; the prime is a wee bit faster to use and more compact, as well as offering much more speed.
