You are correct in that when using an F5-6.3 lens, loosing 1-2 stops of light would require you to either slow up your shutter speed or increase your ISO. In your case, you would have to bump up your ISO to maintain a shutter speed capable of capturing a moving animal. I personally think 500mm's should be sufficient for most situations while on the Safari. You should also be aware, the lose of exposure also means the view through you viewfinder gets 1-2 stops darker and you will loose auto focusing.
