Many of those shots are sleeping babies - prime material for the Brenizer method (stitched panoramas that can achieve effects normally limited to medium format or large format). It's fairly easy if you've got a stationary subject; I find it easier than trying to "shop in" the bokeh...
EDIT: LOL.. Yeah, I read the title, but in flipping back and forth from the comments to the pictures, I forgot; what I started to say is that stitching is easier than it seems with some of the software out there....
