A reality of software development is that things get exponentially more difficult to get right with the 'size' of the software which roughly equals the feature list length. In that sense something with a reduced feature set would be desirable, but since buyers (or marketing, management ...) in general do not appreciate this, products with long feature lists working so-so will continue to be the norm in anything driven by software.

So this is really a serious question? Wel you just could not use it. Or you could ask Pentax to make a custome made camera for you personally. It won't be cheap but it is possible. Or just buy the 645D.

If everyone could just ask for things to add or leave out of the camera, there wouldn't be mass production. Sorry, but that world doesn't excist anymore.

video in the K5 is almost useless until they fix the manual control of the ISO failure, so you dont have to worry...

More importantly, the only thing worse for software complexity than creeping featuritis is an attempt to maintain multiple baselines. Having one baseline with video and one without complicates testing immensely. It also complicates the management of product distribution (multiple SKUs, etc). End result is a K-5 minus video would cost more than a normal K-5.

Plus as I stated before - Pentax implemented video on the K-5 in a very minimal way such as to greatly reduce the level of effort required and the software/hardware complexity. MJPEG provides awful compression ratios, but lets them use the same compression engine they use for still shots. It's also easier to edit MJPEG than AVCHD.

As to "I already have a good camcorder" - I have a fairly good Canon high def unit (an HF100) - For some situations the Canon is way better than the K-5, but for others the K-5 is actually superior. It's a lot easier to hold the K-5 steady for example, and even though the HF100 is quite respectable in low light, the K-5 smokes it.
