Actually, there is a trick allowing "full" manual control of movie mode...
Set one USER to Av, then choose aperture and ISO (in the 100-3200 range only), point the camera around until you reach the desired speed, and press AE-L.
Now, go to movie mode (which is right next to USER), and Tadaaaam! the camera kept the exposure locked with all the settings you choose...
Pretty neat, no?
