What do you find the differences are among the in-camera sharpness settings in your final rendering: standard, fine & extra fine?

to be honest no .
I once did a set of terst shots of a focus chart that came with a camera magazine and tried various sharpening setting but could hardly see any difference which surprised me, as I then wondered why was it even a option, mind you I was shooting raw so I don't know if that was the reason

Always shoot at maximum image size & resolution; that way you've got the best possible starting point although images might be a tad soft - but that's dSRLs. If you put in too much sharpness to a JPG, it can't be removed; better to post process the image to get the desired effect.
