There are many ways of using bracketing and stacking. You can take multiple exposures with different EV for HDR. Or you can bracket with different shutter times, for example to achieve different amount of blur, but the same EV. DoF bracketing just means getting the same EV, but different DoF, as above examples illustrate very well. Focus stacking is a different technique, which doesn't change EV or DoF, but it does shift the focus point. I don't think any camera can do this automatically. Usually its done for macro photography, so the bellows are used to slightly shift the frame and then they are digitally stacked, as far as I know.

Sounds reasonable. Many portrait and wedding photographers use bracketing or even burst mode. Then they delete all the photos except the one that is perfect (nobody is blinking, focus is spot on, and so on).

The old mantra from manual SLR film was F8 and 1/250 is great. F8 +/- 1 and 1/160 with flash is good.

I think, but could be wrong. I'm down to 5 active brain cells and 3 don't like each other.
