best settings for copying?

I have tried everything I can think of to improve the range of sensitivity for copying art work and jewelry. Using a Kodak gray scale the bet I can do is .05 on the white end and 1.60 at the black end. Using Photoshop brightness and contrast I can move the range around so white is .00 and black is 1.30 or white is .15 and black is 1.90 and that is it. My point and shoot camera, a Canon powershot,has a range of .00 through 1.75 with no adjustments except color temperature. I've tried different lenses, different lighting, and shooting in both RAW and jpg. Nothing seems to help. Any advice?

For artwork I would use a flatbed. As far as jewelry (or any product photo) goes, a softbox would allow you to achieve optimal lighting.
