One comment: the cigaret and its ash is probably the only sterile part of the equipment, so I would not vorry too much about it. Ash in the food doesn't qualify as passive smooking anyway.

Never thought about it this way, still I'd rather give this sort of Chinese cuisine a miss. (Always have whenever I am in China). But I must say photographing the hustle, bustle and chaos of the back streets and alleys in China always gives me a thrill.
