My wife makes one or two pies a year, but it's a maximum effort. The crust is all handmade with a pastry cutter. The filling starts with a
kabocha if we can find it, a pie pumpkin if not. The kabocha is sweeter than a pumpkin. She even grinds her own nutmeg. It is the kind of pie that makes you not want to eat anyone else's version.
