I made the mistake of turning my back on him in Doolin, he walked up behind me and bit my shoulder as I stood on the old bridge at the Aille River where I was staying

I presume you patted him and talked to him when you took his pic. Then you walked off. He was either expecting you to feed him or to give him more than you did. Horses and donkeys are not stupid and can make their point forcefully.
