Damn, I just cooked a chicken. My late wife would be proud of me ...

I was never much of a "Chef" ... but I decided I was going to cook a whole fresh chicken for Christmas. Being alone, I will have chicken on the menu for several days but then, you can make a sandwich, eat it with mashed potatoes and green peas or prepare soup with cream and vegetables. I lost my wife in February 2013, so the 10th "anniversary" is just around the corner. My wife would be proud of my cooking achievements. Canon compact with flash in "MACRO" mode. EXIF date totally off.

Best cooked chicken is chicken that had time to be refrigerated overnight and reheated the next day. Lunchtime will be here soon, so "Here come the fork and knife" ... lol !

Looks good - and I should know as I make a roast chicken once a week! Enjoy it!

Isn't it something we think so much of what we lost, and what we miss? And, here, you also reflect on a gain you have made - roast chicken! Roast chicken is not in my bailiwick.

I am also impressed by the roasting job on the chicken!
We also have one of those. I eat the legs for two days and cannot tolerate the white meat.
So I put it into a deep pot, half covered with water and then fill the pot with various cut vegetables--especially onions, carrots and tomatoes.
That is delicious for nearly a week of meals.
