Depends on the lens focal length, the ISO and aperture you use, the driving speed, and how important sharpness is to you. For instance: to use the DA18-55 kit lens at f/8 while driving at 50mph, set the shutter to 1/500 and let the ISO float up. Better yet, try some tests before you leave. Drive around and shoot with different combinations, see what works for you. Have fun!

Yes, depends on focal length and how fast you will be going, and how far the subject is. Then according to that you have to set up ISO (set it to ISO auto with the top being 1600 or whatever is the highest you can still accept) and aperture (well, in Tv mode the camera will do this for you).
I suggest you slow down the car and take a shot lol, but 1/500 seems like a good place to start.

You can also create wonderful motion blur by panning while driving and using a slow shutter speed like 1/125 or lower. That's worth an experiment or two.
