What mm do you tell at start up

So when you are using an adapter, say M42 to Q with a 50mm lens

Do you tell it at startup you're using a 50mm or 275mm or something else?

a 50mm lens is always a 50mm lens - the only thing that changes is your field of view....

For SR put the actual focal length. The camera understand what to do.

The only time you'd specify something different would be if you had a teleconverter (e.g. 1.4x) or an inter-series adapter with a lens in the middle, and those are hard to figure out unless specified by the manufacturer.

The field of view is the less important part. In the end, youíll adapt to it. For me image quality is more of a concern. Luckily this isnít the case with M42... so observe and adapt your approach.

But what if it is a zoom lens? Are you better off telling the camera it is a 50mm or say 200mm? Assuming the lens is 50-200, that is.

Technically, you should enter each focal length as you change zoom, anything else is simply a compromise, which may or may not be better than not using the feature at all.
Remember, 'Shake Reduction' is a relatively recent concept in the history of photography Ö very many very acceptable pictures were made before SR was made available to the general public. A simple reversion to "basics" and utilising an appropriate shutter speed for the prevailing conditions will often obviate the need for SR
