To me, I suppose the "ultimate bird shot" is something very different, though. I suppose much of the attraction I find in bird photography is about capturing the wild. Birdwatching is all about brilliant moments, and birds are shy, fast, secretive. A zoo bird like the owl in your shot is, to me, more like cat photography: I can see that cats are pretty, aesthetic creatures, but they are also domestic, and they lack that magic of... I don't know - transience(?) that draws me to bird photography. Also, the leather straps sort of ruin it a bit - like seeing shackles on something you admire. Birds of prey simply are not pets, to me.
Now I end up sounding cranky, didn't mean to. I like the video you shared, and the bird is incredibly graceful. But no matter how much technology advances, seeing this behaviour "for real" (no leather straps) will require skill, patience and lots of luck.
