The 21" iMac isn't a great buy to be honest. If you were to drop say $2100 on a loaded iMac you're getting screwed on a couple fronts.
-The memory since they are charging $200 to upgrade you up to 16GB. The 27" one is user accessible and easy as heck to install your own memory. Just go on Amazon and grab a $60 16GB ram kit and then your iMac is going to have 24GB(which is overkill usually but theres no wall really).
-The video card in the 21" iMac is rubbish. It's an integrated video card which is what you find in a Mac laptop. The 27" has a dedicated video card and much more powerful.
-27" has a faster CPU
-27" screen is probably worth at least $1500 alone.
