I'm not sure they are directly raising prices as broadening asst. Sony is rumoured to have 3 upcoming (NEX, 24mp and 36mp). the D800 price is for a 36mp FF but Sony also is going to have a 24mp so it's possible there will be a D700 mkII or a lower price alternate in addition to moving the 800 up the line. Canon seems to be doing similar things with the video oriented DSLR they launched.
with All the rumoured products in the FF camp it's obvious there is some move towards shifting that market a bit. Ultimately i think enthusiasts and pros will move to FF as their main system with and apsc for backup, and apsC will move towards entry and MILC users who have different demands and needs
There have been loads of different formats that served the general consumer market over the years but the enthusiast pro market has largely been limited to a couple of (generally) expensive areas, high end 35mm (FF) and Medium format with a limited number of specialist large format shooters. Digital doesn't really change that much
