For my style of photography, I greatly prefer dials over a menu on the screen.
I am a landscape/still image photographer. I usually shoot with a tripod, and low angle. I use the tilt out screen to prevent needing to get on my belly or knees when shooting low angle. I never use the viewfinder and compose and focus using live view on the back screen. If I have to change ISO or make another adjustment, if there are no available dials to perform the adjustment, I will have to go out of live view, change the ISO, and then go back into live view. It is so much quicker and easier for a person with this technique just to leave the image on the screen, and make the quick ISO (or other) adjustment with a dial.
