Quite true. I'm surprised more people don't want a functional aperture ring though, especially given it's long history and very practical nature.
- The automatic mode is already necessary and allow to control apperture already.
- The apperture ring restrict you to Av, Tav or M mode.
- The apperture is not configurable.
- In term of efficiancy, the camera wheels are faster to operate.
- People new to photography don't have lenses with apperture ring. Or only a few. It make no sense to learn and use a method that work only in some situations.

There no much reason to want to use an apperture ring outside of adapters and other extension tube that don't transmit the informations. This is not only Pentax you know, this is basically the whole market that remove apperture rings.

I respect you habits and interrests and I'am for you to be able to work the way you are accustomed to, but I'am not sure at all this is a superior way to take photos.

I've heard that story for a number of retail chains already. All gone belly up, Pentax survives. The best answer to such people: "find a new job, asap..."
Maybe it's a curse? Say "Pentax is doomed", and you are doomed yourself!

Yes, there's a ritual involved: you have to do it 3 times consecutively while thinking "I'll sell him a Canon/Nikon, there are some good incentives on those".

But I can assure you the K-1 is a hell of a camera!
Here, published today, he explained his first contact with K-1 :

Le reflex 24x36 se précise chez Pentax - Réponses Photo

So he states that the mobile rear screen is very practical to manipulate ; but unfortunately, the viewfinder was NOT available nor operating, nor the camera, wich therefore was NOT a working pre-prod. model.

(A lot easier to read in French though)

So Ricoh Imaging Russia was right when they stated it was just One of the prototype models and not a functional model.

So what was on display in Paris was Plastic Lump v2.0, essentially.
Not very encouraging at all.

What could there be about the viewfinder that wasn't 'working'?

OK, not plastic. There was some metal in there. But fundamentally it was still a totally dead device, it seems. A mere mockup.

The problem with that being?
I hope you don't seriously believe that a display prototype would accurately reflect the current development status inside Ricoh Imaging's R&D labs... even though such claims were made before.

I don't think It was a mock-up more likely some stuff was left out (sensor, mirror), to no make it usable in case of theft.

Could be. Perhaps there's something about the viewfinder they don't want us to find out yet.
Or perhaps the battery was not inserted, and the viewfinder somehow doesn't work without it.
