I'd really like the camera to record the EV (one in a custom tag) with open aperture and again after stopping down for K and M lenses - enabled as a custom function similar to the aperture ring, as it may take a few milliseconds. This way the aperture could be estimated in post-processing.

Yes, the obvious problem with that is,
how do you know what aperture the tiny camera was using?

It will be but isn't yet: Firmware Update Software Version 1.43 for Pentax K-1 dates back to November 9,2017.

I like your idea, but can't you re-write the code without a bunch of "GOTO" statements in it? Maybe a "do whlie" approach? One of our old coding teachers will come slap your knuckles for that!

Could I? Probably. But I would rather write a code task abstract and deliverable date.

My coding experience was a forced course in BASIC in 1979, required for MBA candidates who It was thought should know the rudiments of BASIC so as to be better able to assign coding tasks to others who actually would know how to write compact, resource-stingy code. IIRC at the time Wang was a big deal, IBM had a ‘Mini Computer’ the size of a file cabinet and Basic-4 was a hardware and software competitor with IBM for small business. My father committed to the B-4 path, which is partly responsible for the demise of the family business.

I’ve always been fascinated by the logic structure: if NOT condition, look somewhere else for instruction; otherwise do this . . .

lol! Worn that hat too. Business Admin person myself, and once upon a time, did a lot of Federal contracting, but somehow, have always had one foot stuck in IT.
