The stunning look, apart from the camera quality, also reflects the production value and the skill of the videographer. We can all see the professional production involved.
In the hands of most consumers, the video probably won't look half as good....
Here's a video comparing clips from 5DII and D90, and even though it is much better than D90, 5DII's CMOS rolling shutter wobble is noticeable. And you can see how using tripod + professional video head, and appropriate camera mount, and minimizing camera movement and jerkiness, and professional lighting contributes to the polished video look in Vincent's clip; and without them, how "amateurish" it would look:
