It's because as soon as they disclose the name, certain unscrupulous retailers would be able to put up a page and start taking 'pre-orders', which would not be fair to the legitimate retailers that play by the rules. In this case they have already shown clear images of the product, so it would be possible to build quite a credible looking page for the product.
I don't think they'll call it K-3 III. The II cameras have always been minor changes to an existing body, and this is clearly a whole different shape.
