The K3iii "Jet Black", which is a color sensor SLR with a black "Pentax" logo on the front that was sold last year and is now gone (they sold them all)...
The K3iii Monochrome, which is a monochrome sensor SLR with a grey "Pentax" logo on the front and a standard textured paint finish that is currently available for order from all stockiest that carry Pentax, to ship next week (as this is written on 21 April, 2023)...
The K3iii Monochrome Matte Black Edition, which is a monochrome sensor SLR with a grey "Pentax" logo on the front and a smooth matte black finish and is only available from Ricoh direct in Japan, costing a little more than the standard model that everyone loves so they sold out the first two pre-order batches, but there should be more available for summer delivery...
Did I get it right?

So the point is there is very little difference to the matte black model. It is one of Pentax's ruses to get incentivize customers to buy direct from them. Note that the information about the initial release and the order situation of the matte black model has only been published in Japanese. It is not relevant to the standard model or to other countries as far as I know. It's only sites that have auto-translated this without thinking about the precise wording that have created confusion about the availability of the standard model.
By the way, there is at least one more version of the K-3 III to come. That would be the J-Limited 03 model, which will be a "sporty" take on the camera, without a wooden grip, but looking much like a larger, premium version of the K-30 in white and blue. Not sure when that will be released, but a prototype has already been shown with a long prism overhang. It will be functionally the same, but perhaps have a new custom user mode.
