Confusing sushi and sashimi?

Raw chicken…. no, not for me. I know a properly trained sushi/sashimi chef takes extraordinary care in preparing such delicacies. I also know someone who prepared chicken liver pate for a family dinner and put most of the guests in hospital thanks to the raw meat. I’d stick with the fish.

Sushi is generally associated with raw fish but "sushi" is Japanese for sour rice or vinegared rice. It has nothing to do with what's in it or if cooked or not. It can be made with most anything.
The chicken wasn't raw.

I tried some local sushi made with walleye (raw). Again, this is South Dakota. It turns out that raw walleye actually has less flavor than cooked. I wouldn't have thought it was possible for anything edible to have less flavor than fried or steamed walleye.

I have had many varieties of sashimi fish but it seems to be limited to certain species. There are sashimi prawns. Also, Koreans have a raw beef dish.

Needs extreme food hygiene.

The rice is also a special variety that behaves the right way when cooked.

No sushi is made with raw rice despite the absence of food hygiene concerns. It would be a bit crunchy.
