My mom is a beekeeper.
On some property she used to own there was a patch of Japanese Knotweed, an invasive plant that looks a bit like bamboo, but has a broad leaf, and the stalks are weak. It is tuberous, and dies back every winter, leaving an ugly mess of dead and decaying junk. The stuff is nearly impossible to eradicate, spreads like crazy and kills off everything else, grass, shrubs, small trees.
But when it is blooming, it is heavy with white flowers.
Mom would place a few hives by it, and the honey was like molasses. Dark. Rich. And very sweet.
She won first prize at the state fair several years running.
Odd how such a bothersome plant can contribute to something so good.
