I get my whole pork bellies at Costco for making bacon.
Yesterday I saw the price on them had already gone up from $2.35/lb to $2.65/lb.

we have a link to the supply chain

our freezer is full to overflowing in anticipation of this the latest bacon apocalypse
well provisioned and hardhearted guards are in place
so just tamp down your larcenous impulses

at least I know we are safe from that minor villain from texas
there is a nice solid frost set here this morning and snow on the way
even if he braved the cold for our delectables our squirrel-hating dogs would scent his presence...it wouldn't be productive or pretty

if you run out of pig, you might try frying that wet smoked salmon that shows up from time to time
it actually is quite good lightly crisped
add it to cheese omelets, tomato sandwiches or even fried spuds....mmmm!

Despite my warning, squirrels say they will die before they will give up their bacon......


They swear it is corn that make you fat, not bacon.


I'm gonna suffer without my bacon and Velveeta sandwiches, but I have to do the right thing and give up the bacon. Potted meat and Velveeta is just not the same, though it does have plenty of "various pork parts" in it.

I tried to fry some potted meat this morning and it might take several days to get the smell out of the house......

Costco was selling cases of spam, the miracle food, a while back
it is supposedly made in lovely Austin, Minnesota again after a tragic hiatus to Denmark
my wife says no matter where it comes from, there is just too much mystery in this mystery-meat
lovely though she is...she is just wrong...about this

A guy at Costco yesterday was loading what looked like about 30 one gallon jugs of milk into the bed of his truck.
Maybe he thought they said milk shortage, not bacon shortage?

Potted meat can make an exceelent hash, potatoes, onions, hot sauce etc , with a barely poached egg on top , substitute for when you are out of fray bentos corned beef

SPAM: 1) we all know it isn't really "spiced ham," it is "Spare Parts Any Mammal" 2) a taste for it was largely developed during WWII during which GI's really liked it compared to other canned rations; 3) it became and remains especially popular in Hawaii where it is offered in various forms in some restaurants.

I'll have to try that! It's pretty good if you just get a spoon and eat it right out of the can.
