Currently making cheese (for the first time...), pretty darn simple actually:
Heat a litre of goat's milk and a half teaspoon of salt to just on the verge of boiling; add 3 tablespoons of lemon juice and stir; let sit for five minutes; strain through a cheesecloth for an hour.
Waiting for it to strain now, let's see how it turns out

I haven't, but between your post, and Bert's cheese making, had to have a snack of Wisconsin pepper jack cheese on Aldi wheat crackers.

it is good fresh but chilled overnight actually enriches the flavor

if it tastes good to you don't change a thing
we ended up subbing half white wine or rice wine vinegar and lemon juice to start the curding

instead of timing it, let it drip until it drips no more

you can use the whey for baking...pancakes, biscuits and bread will have a pleasant sour flavor much like sourdough

Many times.

Like you have it there, with a soft cheese with edible rind, some hummus, and sprinkled with freshly diced chives or dill. Or some cream cheese with Lox, chives and dill.

Some grapes, and other fresh fruit go well with it too, on the side.

Makes it a 'healthy' snack.

Then I ruin the whole mess by washing it down with some Hefeweizen or Leibfraumilch.

By the way, the power went out here today. About 4 hours ago. Not sure how long it was out, but I took it as a sign that I had better get outside and do something productive.

So I hitched the 8N to the wagon, loaded up chainsaw, fuel and bar oil, limb cutter, rake and other implements of destruction, and headed out to the South 40 and began chopping off dead branches from the row of trees along the South property line and driveway. Got about 1/3 of it done before the rain came.

So now dinner time.

Fresh pork shoulder roast and baked sweet potato.

Mmmmmmmm . . . . . . . . . . . . . . . . . . . tasty!
