Address to a Haggis by Robert Burns


Fair fa' your honest, sonsie face,
Great chieftain o the puddin'-race!
Aboon them a' ye tak your place,
Painch, tripe, or thairm:
Weel are ye worthy o' a grace
As lang's my arm.

The groaning trencher there ye fill,
Your hurdies like a distant hill,
Your pin wad help to mend a mill
In time o need,
While thro your pores the dews distil
Like amber bead.

His knife see rustic Labour dight,
An cut you up wi ready slight,
Trenching your gushing entrails bright,
Like onie ditch;
And then, O what a glorious sight,
Warm-reekin, rich!

Then, horn for horn, they stretch an strive:
Deil tak the hindmost, on they drive,
Till a' their weel-swall'd kytes belyve
Are bent like drums;
The auld Guidman, maist like to rive,
'Bethankit' hums.

Is there that owre his French ragout,
Or olio that wad staw a sow,
Or fricassee wad mak her spew
Wi perfect scunner,
Looks down wi sneering, scornfu view
On sic a dinner?

Poor devil! see him owre his trash,
As feckless as a wither'd rash,
His spindle shank a guid whip-lash,
His nieve a nit;
Thro bloody flood or field to dash,
O how unfit!

But mark the Rustic, haggis-fed,
The trembling earth resounds his tread,
Clap in his walie nieve a blade,
He'll make it whissle;
An legs an arms, an heads will sned,
Like taps o thrissle.

Ye Pow'rs, wha mak mankind your care,
And dish them out their bill o fare,
Auld Scotland wants nae skinking ware
That jaups in luggies:
But, if ye wish her gratefu prayer,
Gie her a Haggis

When we first got married and were on a tight budget, we decided to celebrate when I got a raise and bought some mutton. No musty/ moldy taste at all. When I was in Mexico in 1970 I practically lived off of cabrito (baby goat). There was a place that had them on rotisseries in a big picture window and was open 24/7. I could buy a half cabrito for $2. So delicious!

on the basis of your bit of verse
can I assume that haggis made your forbearers such a murderous, bloodthirsty lot
perhaps it was the pipes keening in anticipation of some coming slaughter

maybe it was a perfect storm
skirling pipes and rumbling guts?

Meanwhile, in Monaco, Ferrari finished 1st and 2nd. Way to go!

And the Greatest Spectacle in racing begins shortly in Indianapolis, the 101st running of the Indy 500. 33 drivers will try to get their face on the Borg Warner trophy and drink the milk in the winner's circle after running hard for 500 miles. Not quite the same without Jim Nabors singing Back Home Again In Indiana.

Next up will be the Coca Cola 600 from Charlotte, North Carolina. 42 men and one woman will wrestle 3,600 pound stock cars around a two and a half mile oval for 600 miles to wrap up the Memorial Day triple header.

Let us all take a moment to remember those who have given their all so that we can be Free.

He had milk, which is the tradition. The tradition was started by 3 time Indy winner Louis Meyer, back in the 1930's. The tradition waned a bit, then was revived in the 1950's by milk companies who sponsored the race and wanted their product in Victory Lane. Currently the American Dairy Association pays a driver $10,000 for taking a sip of milk in the Winner's Circle at Indy.

But.

He was welcome to have any beverage he wishes, provided he is ready for ridicule. Fans are rabid about tradition at Indy. Afterward, of course, he is welcome to consume whatever he wishes, provided it doesn't conflict with his endorsement and sponsorship contracts.

Grilled bangers over an open flame again today, down by the river. Had 2 hours between the Indy 500 and the Coca Cola 600. Went down, set fire to a pile of tree limbs, got some bigger chunks burning and reduced to coals, then grilled them bangers by the hot, radiant heat, until they were black, crispy and dripping. Toasted the buns caveman style on a hot river rock, slathered them with dijon mustard and relish, then choked 'em down with a beer chaser.

I like summer.

I think we are gonna go swimming in the river tomorrow.

Back to the race!

We drink a lot of milk here. I like milk, even goat milk is OK with me, but I prefer real whole cow milk. Are you allergic to milk or just don't like it? We both grew up with milk at every meal, so it is natural to us. Buttermilk.....oh yeah! Love buttermilk with biscuits!
