At that point they are called hard boiled lol

I poach mine in the shell
45 minutes at 150 f perfect every time (sous vide cooking)
In fact tonight I will have a salad topped with grilled asparagus poached eggs and double smoked bacon

Really simple. It was built by a farmer in one of his fields. He probably does not want a bunch of hippies running all over his land trampling it all down. Plus it is right next door to the middle of nowhere without sifficient facilities or services to handle a large crowd.

there is always an exception
a poached egg drowned in an excellent hollandaise

the two versions of egg incorporate into a real taste treat

other than that scrambled or fried hard with the yolk broken

Eggs are done when they're cooked enough to be pocked up without running off of the spatula.

I like poached with yellows hard or soft. I think poached is a mental thing,since I love fried and scrambled too. When I was 2-3 I would only eat "bird eggs" and only poached. My Mom went out on the porch every morning to collect me some "bird eggs" and then poached them for me. Yep, I was spoiled rotten. My Dad did not return from the War in Europe until I was 3 years old, and his parents and my Mom spoiled me plumb rotten. I had every toy know to exist, got any treat I wanted when I wanted it....life was pretty damn good! ....then my Dad came home and it all went to hell!

Doc report from this afternoon: I'm mending, beating the pneumonia. Will still be a fairly long recovery to be back 100%. Got some new meds and the results of my CT scan. Seems I have two very small spots on my right lung that need monitoring. The radiologist said they looked more like scar tissue than any kind of growth, but recommended another CT scan in 3-6 months. This was good news to me...it was the exact same report I got from the last CT scan 12 years ago and in the identical locations. I'm confident it is scar tissue from a broken rib years ago. Today I feel great for the first time in many weeks! Mrs Rupert has had everyone with a mouth praying for me.......I thank them all, and of course Mrs Rupert! I did hear her the other night ....."Lord, please don't leave me alone to feed all those animals, and for sure those damn raccoons."

Now that's not my case, I can cook nice over easy eggs, I just prefer the solid yolk.

Every time I've ordered "over easy" I got a runny yolk. I don't care for runny yolks. My wife and our daughter likes soft yolks, myself and our son not.

Ooh, I love Eggs Benedict. A bit of spinach goes with it nicely, too.
