Easy.

Steam them with a seasoned steam bath.

Drain and pour the steamed mudbugs into a bowl or a platter with low sides.

Take them one at a time, break the heads off, peel and eat the tails, just like shrimp.

No pain.

No stain.

Just tasty mudbugs.

About a year ago my wife insisted I start having fried tomato and boiled egg for breakfast. Big change of habit for me - I had usually had something based on grass seeds, like wheat or oats before that.

Good foods I've tried:
Emu
Kangaroo tail
Alligator tail
Rattlesnake fritters
goat-neck curry

Bad food I've tried:
chocolate covered ants, grasshoppers, and baby bees (=larvae) - strange crunchiness, the grasshopper legs take a lot of chewing before you can swallow
fried earthworms - taste like dirt
pickled eel - taste cannot be described, or shouldn't be
pickled octopus - rubbery

I've had eel at a sushi bar. Freshwater and saltwater. Very good.

Octopus is also very good, lightly steamed then served cold.

Always wanted to try rattlesnake and alligator.

Ants, grasshoppers, bee larvae and earthworms? No way.

I will generally try anything (once), but I drew the line at raw sea urchin roe, scooped from an urchin lifted out of the sea. We studied had small parasitic worms in those gonads, which could easily be seen as red specks in the roe - moving. No thank you.

I once lost an honor bet between O-Line and D-Line at Football practice in High School (If you run the obstacle course in just your jock I’ll eat a worm sandwich). The other guy’s gear was on the ground in seconds and off he went. Coach gently reminded me as a Senior it would not be a good thing to renege, and certainly the offense expected me to uphold our honor.

At lunch the next day the Headmaster called up the D-Line Coach, who explained the challenge and called me forward. Mrs. Oesch, the Head Dietician (Lunch Lady) brought forth a platter embellished with greens and a nicely toasted bagel in the center. I made a production of removing the top half and showing the neatly arranged worms to the school, put it back, took a large bite, chewed it down and said, “Tastes like dirt!”

Much uproar and laughter - a well-played silly interlude that was mentioned at a Black Tie dinner in the 100th Anniversary Address (please, stand [Tastes like Dirt]).

Prep School was so weird. 12 years, some Academic Honors, Prize Speaking, Theater, 9 Varsity Letters and a State Championship - and all they remember is a worm sandwich.
