Actually, for salmon it is called collars I think. Right behind the gills and the head.

I fix them with honey, soy sauce, mirin, ponzu, lemon juice, lime juice, and orange juice.

Salmon candy.

In Australia that part of fish with the front lower fins is called 'fish wings' in most fish shops for most kinds.

I often eat what I thought you meant by cheeks - the side of the head below the eyes, along with most of the rest of the head. Involves a lot of spitting out of bones. Not elegant.

In Finnish a noun can have more than 2,000 (yep, two thousand) different inflections.

kauppa
kauppakin
kauppapas
kaupallansakinkohan
etc
etc
etc
.
.
.
etc

No wonder Finns are a bit... different.
