Do you buy your fish fresh or frozen? I've previously been a stickler for buying it fresh when possible, but in the last year or two I've bought good-quality frozen, and I've been surprised by how good it is. Much better than I remember from many years ago (perhaps the freezing and storage methods have changed?).
I only live a very few miles from the coast, and we have some decent seafood restaurants in my area that get their produce daily from local fishing boats. You can definitely tell the difference, same as on the rare occasions I've gone trout fishing, brought a few home and cooked one the same day. But when I buy fresh at the fishmonger's, or at the fresh seafood counter at my local supermarkets, well... I'm just not sure it's
that fresh. I'm tending to find that (based on my local sources, at least) frozen fish is at least as good - often,
better - in terms of flavour, and very little different in texture...
Which brings me onto a question I've been meaning to ask the good folks of this thread...
What's your opinion on Vietnamese farmed basa fish (also called "swai", or "Asian catfish", I believe), if quality-assured by a reputable supermarket chain such as Aldi? There are a few reasons I'm curious about it... (1) American catfish isn't readily available in the UK, and I've read that basa / swai is - whilst not the same - a reasonable substitute; (2) it's popular in Asian cooking (obviously), (3) it's low in fat and high in protein, and (4) it's very inexpensive here, and - whilst cost isn't a primary concern for me (within reason) - I'm always happy to economise if it doesn't mean sacrificing quality, flavour and safety.
But I've read some scare stories about basa being caught or raised in dirty waters. I've also read that:
- some scare stories were spread by catfish farmers in other countries, worried about the effect on their business
- some states in the USA have banned Vietnamese basa
- Australia loves basa and promotes it as a healthy food
So I'm kinda confused. My assumption is that Aldi UK wouldn't supply questionable fish, but I obviously don't know that for sure.
