Definitely not sweet, salty and smoky like jerky.
Jerky doesn't have to be any sweeter than the meat itself, salty, or even smoked.
Store bought jerky usually has a sweetener added, like brown sugar, and most recipes call for a marinade with sugar.
Personally, I like a touch of sweet, salty, and smoked, but I've made it many ways with both beef and venison.
A dehydrator comes in handy after cold smoking.
I think this was venison from son's archery kill.

Beautiful day in southern England; a little bit of a cold wind but nothing to spoil that clear, pale-blue sky.
That was the same day I was describing viewed from a different place in southern England. We both saw the same- is that a triumph of modernism over postmodernism?

I'm (I think) enjoying a Brewdog Paradox Islay, an Imperial Stout aged on whisky casks from Islay. I'm fairly certain those casks have contained Laphroaig - the taste is distinct. Smoky! And 15% vol alcohol.

Gift from the kids

Lunch with my main squeeze today at our favorite bar and grill for burgers.
Their regular burgers are too big for us at 1/2 lb., so we get the kids 1/4 lb. cheeseburgers with a pile of shoestring fries for only $5.00 each meal.
Cheaper than McD's and a thousand times better.

We do the same as far as getting a burger now and then, a place called the Buzz Inn, a regional chain that is kind of a breakfast/lunch/dinner/restaurant/bar.

Always a treat.

But I'm still a pig and I get the 1/2 lb burger.

With bacon.

And sharp cheddar cheese.

The local sewage lagoon is a considerable step up from McDonald's.

Oh, and Mrs. Racer pestered me to bring up all the boxes for the Christmas stuff this morning. We got all the ornaments off the tree, packed and put away, and gathered all the other stuff, also packed and stored away for another year.

Taking a quick break for lunch, then I'll yank all those sparkly new LED lights off the tree, put them away, and take the tree apart, placing each bough carefully in the box for its summer nap.

Did I mention I really like Christmas?

It is such a magical time of year.

The lights.

The ornaments.

The smells.

The colors.

The food.

The bacon.

I certainly don't need a K-3 for all this.

Nope.

The K-1 has been perfect since the day it arrived.

So now all the lights are off the tree, stored for another year.

The tree, an artificial "Martha Stewart Living" hand me down from Mrs. Racer's older sister, is securely back inside the box, tucked away in a dark corner of the basement again.

We call it Martha goes back to prison.

The tree is getting quite old, and sheds needles easily. I guess we didn't water it well enough.

Anyway, there is usually a pretty big mess after setting it up, and taking it down. So that is also cleaned up, the table moved back from the bedroom, the other furniture moved back into the regular postion.

And now, once again, Christmas is over.

Happy New Year everybody.
