Mrs. P just got back from shopping and brought 5 lbs of "country style' ribs. I'm about to apply a liberal amount of Famous Dave's rib rub in preparation for boiling, then into the oven. Mmmmmmm-mmmmmmmmmm!

Geez....I haven't heard 'Uff da !' since I used to spend my complete summers down in Northern Minnesota when I was a kid in the late '50's, early '60's . Are you by any chance from Northern Minnesota, North Dakota ? Back then and down there...(remember I'm from up there...being a Canuck)...Uff Da's were as common as 'ehs' in the Western Canadian prairies.

Mrs. Racer 2.0 is Norwegian (mostly).

As well as a large portion of the population in the Pacific Northwet.

So I have been influenced by them, and even speak a tiny bit of the language.

When I was a kid I would spend all July and August down at the lake...plus all weekends from Victoria Day (3rd weekend of May) to September long weekend in a state park in Northern Minnesota. Got to know a lot of wonderful Americans...both adults and kids. Went fishing, exploring, swimming...you name it. I figure I have spent about 18 months of my life living in Minnesota and I enjoyed every minute of it.

In that part of the state the population was of Scandinavian background...Norwegian, Swedish for the most part. Back in the late '50's, early '60's there were still some older Minnesotans that had been born in Norway/Sweden and they spoke accented English and there were always a few Scandinavian words slipped into conversations, which after awhile I was able to pick up. Uff da was the most common that I recall, and that word triggers very pleasant memories of the idyllic summers spent at Lake Bronson ...up north in Minnesota.

As Bob Hope used to say...thanks for the memories.

I'll take the brandy. (or turpentine, or kerosene, or, well, just about anything else.)
Yep, I'd take some Danish snaps over Canadian Club (which is what they leave behind, it seems - and why shouldn't they!) any day.

Don't think we would such fools as to leave good alcohol just lying around.

Something like that was common in ancient Near Eastern warfare. The tribes would send out a “champion” to fight, and the winner would have dominion over the loser for long enough to extract tribute, at least for a year when the next war season would come about.

That is the context of the David and Goliath account in the Bible.

Thanks Mark!
Here's my method, but I doubt you can get the Morton's product. A proper mix of pink curing salt and salt works just as well.

1 level Tablespoon of Morton's Tender Quick for each pound of pork belly.
Rub it evenly on the meat.
Add brown sugar, and/or spices, if you would like.
Place it in a plastic bag.
Put it in the fridge for 7 days, turning each day.
Day 7, rinse very well in cool water, pat dry, put on a cookie cooling rack, place in the fridge uncovered for a day, or at least several hours.
Cool smoke to around 145/F degrees internal.
Thank you Bob! I'll see what I can get and will give it a go.

Mom looks great!
Hardly recognized you without your lycra suit.
I asked my mom whether she think the risk is too high - going to Wellington. She said: "I'm 86. I'll have to die from something." So, I figured since we're not going anywhere public she's probably good to go. She enjoyed it, as did we.
