Actually most grocery stores these days have a butcher counter, don't they as well as the prepped meat in the cases? Except Walmart and Target most around here do and I don't like to buy mystery meat from them anyway. I prefer a real butcher shop but the only I've found here is rather expensive and the one time we did buy meat from them, a couple of good looking filets special thing for Dad's birthday, they actually tasted like they were horse meat. I kid you not. Those were the absolute worst steaks I've ever had and they cost like $25 a lb too!

what makes me wonder sometimes is the logistics. take Safeway, for example (they work 24/7, which comes in handy at times): the only grass-fed beef there comes from.. Australia. Undoubtedly a good quality product, but it's from the other side of the globe! Why there isn't a single piece of locally grown organic grass-fed beef available in local stores? vegetarian-fed, yes, which may as well be corn, soy, any plant-based animal food, not necessarily grass; what the actual?.. even whole foods doesn't seem to carry it. if they do, they hide the fact very diligently.

A lightly seasoned tempura batter and a quick dip in the skillet, then onto the plate and enjoy! The leftover bits from processing them get added to a real good New England chowder.

Mmmmmm . . . . . . . . . . tasty!!

My epicurean goal in life is to someday have the opportunity to try those. I love shellfish, particularly mollusks, and I just have to believe that geoducks are the Holy Grail.
