The beauty of grits is that they don't interfere with the flavor of whatever is put on top of them or mixed in with them. The same sort of effect that fish have in French cuisine - the secret is in the sauce, not the bland fish. But the grits have better texture than the fish, in my experience.

Stir in a little bacon fat (or maple syrup or even cheese) and voila, just thought I should ad a little french to go with the previous post...

John Wayne was not a Southerner. He was born in the Heartland of the US, but lived and worked in Los Angeles. He also had residences in many places, both the US and abroad.
