Cheese curds are just baby cheese! They can at least be made into cheese - once it goes Velveeta, it can never go back.

You'd have to ask someone from Quebec, I've heard Kay-beck-quoi expound on the subject, I just can't remember what Jenna said.

IIRC, it's simply a matter of personal taste, meaning many long ugly battles have been fought, and friendships, marriages, and lives destroyed, over which way is "right".
