Okay, so technically cheese curds aren't cheese, but they're closer to it than Velveeta is.

Speaking of cheese curds, I got some the other day that were soaked in Buffalo wing sauce. MMMMMMM M!


Norm: In traditional Poutine, is the gravy put over the curds or are the curds put on after the gravy? I've seen it done both ways but sometimes, and I know this is hard to believe, some recipes get bastardized when they cross international borders.

Cheese curds are just baby cheese! They can at least be made into cheese - once it goes Velveeta, it can never go back.

You'd have to ask someone from Quebec, I've heard Kay-beck-quoi expound on the subject, I just can't remember what Jenna said.

IIRC, it's simply a matter of personal taste, meaning many long ugly battles have been fought, and friendships, marriages, and lives destroyed, over which way is "right".

Sounds like it might be better just to not have an opinion, unless that gets you reviled by both sides.
